Fish Hawk Spirits: Farm-to-Bottle Distillery with Deep Florida Roots

For Fish Hawk Spirits, a farm-to-bottle distillery in Dunnellon, Florida, Rainbow Springs’ crystal waters provide a premium water source excellent for artisan whiskey making.
Using a handcrafted approach, Fish Hawk Spirits’ unique storyline unravels a distinct flavor with each sip. Each of their ingredients comes with its own one-of-a-kind backstory, hailing from all corners of Florida, from their backyard in Ocala/Marion County to South Florida. Their blueberries and blackberries arrive from Island Grove, located in Alachua County, Florida, the namesake for their Island Grove Blueberry Vodka.
With horseback riding being one of Ocala/Marion County’s most famous attractions, distillery visitors will be able to experience the heart of the destination through a guided horseback ride to the distillery from a designated pick up point. This specialty tour offers guests a one of a kind experience, while showcasing the craftsmanship of the distilleries signature spirits.
On your tour through Fish Hawk’s distillery you’ll have to try their most popular product, Marion 106 Black, named after Ocala/Marion County, where it is produced. Each bottle takes more than 60 tangerines to make, nodding to the Sunshine State’s abundant citrus groves. No extract flavorings are ever used in producing these fine spirits, as each barrel is infused with fresh fruit, herbs, and botanicals for weeks to bring out distinct flavors in each bottle.
This fall, Fish Hawk Spirits will launch six new whiskey blends. The first three to hit the shelves are:
Siren Song – A handcrafted bold whiskey with a smooth taste and clarity prompted by Rainbow Springs. This whiskey will become an instant classic for true the whiskey connoisseur.
Conquistador 1513 – A complex blend, this spirit uses Florida-grown raw and smoked oats, mashed then distilled and infused with charred American Oak chips. The Conquistador 1513 lives up to its namesake, honoring the Spanish discoverers who reached Florida in the early 1500s with a single sip—a discovery of flavor on its own.
Silver Queen – A royal blend, only 100 bottles of this spirit will be available this season. Crafted in handmade bins, this liquor is made with Silver Queen corn, grown locally and GMO-free in Ocala/Marion County on Fish Hawks Farm. The rare batch is flavored with the entire corn plant, allowing the sugar found in the stalk to give this whiskey a sweet and full-bodied taste.
